easy fruit cake

I have grown up with this cake and once I was older, I couldn't find it anything as nice so I asked my mum for a copy of the recipe. It is popular with my toddlers as well as my friends and family. Its a light cake rather than the usual thick heavy fruit cakes. It will have a hard crust on the 1st day, so is best served after left in a cake tin overnight.
I always just wait for the margarine to disolve before stopping the cooking process and for a more moist cake I add 1-2 tablespoons extra milk in just before adding the egg, this helps speed up the cooling process. At christmas I have mixed half the milk with brandy for a more festive taste!
- 4oz 100 g Margarine
- 8oz 225g Brown Sugar
- 8oz 225g Mixed Dried Fruit
- 1 cup milk
- 12oz 350g Self Raising Flour
- 1 tsp Mixed Spice
- 1 Egg
Cook the margarine, Sugar, fruit and milk in a saucepan until margarine and sugar have dissolved. Allow to cool. Add the flour, mixed spice and egg. Mix well and pour into an 8” greased tin. Bake at gas mark 2 or 150C for 1 hour.
