Ingredients for Chilli Con Carne (Best ever recipe this!)
500g lean minced beef
1 medium onion, 2 cloves garlic
1 Tin Chopped tomatoes
1 Green Pepper
1 teaspoon each of Cumin and Chilli Powder (medium or hot, depending on taste)
I tin kidney beans in Chilli Sauce (I find these give a much creamier texture to the chilli than chilli beans in water) and a good squeeze of tomato puree. Pinch of Salt and a good grind of Black Pepper.
Fry off mince in non stick pan, drain off fat, add chopped onion and garlic, cook for 5 minutes, add chopped pepper, tinned tomatoes, kidney beans,seasoning, cumin and chilli powder, simmer very slowly for 30-45 minutes.
Preheat oven Gas Mark 7
Take 4 large Baking potatoes, scrub and bake until soft, approximately 1hr 30 mins.
When potatoes are cooked, slice vertically, and when slightly cool scrape out the potato and place in bowl, keeping the skin as intact as you can.
Spoon Chilli mixture into the potato skins, approximately half way. Mix 75g grated cheddar cheese(or more if you like it stronger) into the potato mixture, and spoon on top of the chilli.
Place the potato halves under a hot grill for about 5 mins, until the potato goes crisp on the top.
Delicious, and great as an extra dish for a barbecue.
