chocolate bread pudding with hot fudge sauce
rating:6 slices of white bread, crust removed
1/4 pint of milk
6oz can evaporated milk
2tbsp unsweetened cocoa powder
2 eggs
2tbsp dark muscovado sugar
1tsp vanilla extract
icing sugar for dusting
Hot Fudge Sauce
2oz dark chocolate, broken into pieces
1tbsp unsweeteened cocoa powder
2tbsp golden syrup
2oz butter or margarine
2tbsp dark muscovado sugar
1/4 pint milk
1tbsp corn flour
Grease a shallow ovenproof dish, Cut the bread inti squares and layer them in the dish.
Heat the milk, evaporated milk and cocoa powder until luke warm, stirring occasionaly.
Whisk together the eggs,sugar and vanilla extract. Add to the warm milk and beat well.
Pour over the bread, making sure that all the bread is covered. Cover with cling film and chill for 1 - 2 hours (or over night).
Bake pudding in a preheated oven at 180c/350f/gas mark 4. For about 35 - 40 minutes until set, aloww to stand for 5 minutes.
To make the sauce, put chocolate, cocoa powder, syrup, butter/marg, sugar, milk and cornflour into a saucepan. Stirring until smooth.
Dust with icing sugar and serve with the hot fudge sauce.
