this is a variant of Spanish omelette and serves four.
2 tablespoons olive oil
4oz (113gm) pack sliced pepperoni
4ozs (125gm) sliced mushrooms
1/2 bunch finely-chopped spring onions
6 size 2 eggs
4ozs (125gm) grated mature Cheddar
2 tablespoons freshly-chopped parsley
salt and pepper
nb:you can adjust ingredients to include potatoes, green pepper, bacon, chillies, etc - whatever takes your fancy or uses up what's in the fridge.
cooking time: approx 15 minutes
heat oil in frying pan and sauté pepperoni, sliced mushrooms and spring onions for 2-3 mins, stirring occasionally.
crack eggs into a jug and beat together with the grated cheese, parsley, salt and pepper.
pour beaten eggs into pan with pepperoni etc and cook over moderate heat for 5-6 mins, until underside turns golden.
place pan under hot grill for 3-4 mins until top is set and golden.
turn out onto warm plate and serve with French bread and green salad.
