This a very easy recipe very common in Spanish cuisine. The real one is a bit heavier than this. It is really tasty and healthy!
a pressure pot
2 medium carrots
1 medium onion
1/2 can of chopped tomatoes
1 red pepper
2 cups of lentils (preferably green, and better the rounded ones)
1 vegetable stock cube (or one tablespoon)
meat and chorizo as desired.
salt and pepper and a table spoon of oil
Chopped the onion, red pepper, leeks and carrots into pieces of 2cm more or less.
Put the oil into the pressure pot, add the tomatoes, red pepper, onions meat and/or chorizo and cook until golden. Add all the chopped vegetables and stir for a couple of minutes.
Add the lentils, mix with the vegetables, add the stock cube and cover with water. preferably 3 fingers in excess from the lentils.
Add salt and close. Cook for 15 minutes or as indicated for lentils in your pressure pot instructions.
