rhubarb and apple almond pudding

 some rhubarb, washed and cut into chunks

topped up with a Bramley, as there didn't seem to be enough rhubarb
grated fresh ginger to your liking
honey ditto
4oz ground almonds
4oz caster sugara
2 eggs
2 oz buttera
some flaked almonds for scattering
Put the first four ingredients in an oven proof dish.  I nuked it at this stage for about 3 minutes to start the fruit off.
Whizz the other ingredients in the food processor, spread on top of the fruit.  Scatter with flaked almonds.
Bake at 180/Gas 4 for 1 hour.  Serve with cream or ice cream.  Fab.
