creamy and spicy pastarating:
2 Tins of Chopped Tomatoes
2 Medium Onions, finely chopped
5 Cloves of Garlic, finely chopped
1 Red Pepper, finely diced
1 Yellow Pepper, finely diced
Good Glug of Olive Oil
1 Tablespoon of Creme Fraiche
1-2 Tablespoons of Grated Parmesan
1 Red Chilli, finely chopped
Good Pinch of Dried Mixed Herbs
Pinch of Sugar, Salt and Pepper
Pasta of your choice
Gently fry the onions and peppers together until soft and golden.
Then add the dried herbs, garlic and chilli and fry for another couple of minutes.
Then add the tomatoes along with a pinch of sugar and lots of salt and pepper, then bring up to the boil and simmer for around 15mins until the sauce has reduced and thickened a bit.
Then stir in the parmesan and creme fraiche, check the seasoning and stir the sauce into the pasta, then serve :)
Possible additions - Chunks of Roast Chicken, Bacon, Kidney Beans, Fresh Basil
