plum shortcake
rating:225g self raising flour
125g butter or margarine
75g caster sugar
finely grated rind of 1 lemon
2 medium eggs, beaten
450g plums, halved and stoned
4oz marzipan, diced
a little melted butter for brushing
icing sugar to dredge
Preheat oven to 190C/375F/Gas 5.
Sift the flour into a large bowl, and rub in the butter. Stir in sugar and lemon rind. Add the beaten eggs and stir well, combining to give a soft dough.
Press the mixture into a 21.5cm mould - this recipe came with my silicone one, so I imagine you'd want to grease a metal one pretty well.
Arrange the plums, cut side down, over the dough, and scatter the marzipan over the top. Brush with butter, and bake for 40-45 minutes until golden.
Dredge with icing sugar before serving.
