garam masala

1 tbsp cardamom seeds
5cm stick of cinnamon
1 tsp cumin seeds
1 tsp whole cloves
1 tsp black peppercorns
1/4 nutmeg

If you feel like it, you can grind all these together manually, using a pestle and mortar.  I know purists will disapprove, but I place all ingredients in a clean coffee-grinder and whiz for 30-40 seconds or until spices are finely ground.  Keep in small jar with tight fitting lid, away from heat and light.
