stuffed mushrooms

Bit of an experiment, this, but it worked!

serves 2

25g porcini
3 teaspoons of couscous
1 huge spring onion (or some small ones) chopped
2 rashers of bacon, chopped
2 cloves of garlic
4 large mushrooms (portabella or field or some such)
some blue cheeese - no idea how much, really

Put the porcini to soak in 150ml of boiling water for about 20 minutes.  Then fish them out,  and put the couscous into the water.  I know this is not the normal way to cook couscous, and it took a while, but it was fine after about 15 minutes, when I was ready for it!

Cleaned the mushrooms, cut off their stalks and save those and put them in a shallow dish, lightly oiled.

Chop the mushroom stalks, spring onion, garlic, porcini, and bacon (ingredients here).  Fry off the bacon in some olive oil until it it's crispy, then set it to drain on kitchen paper. Then  put the mushroom stalks, spring onion, porcini and garlic into the pan with some more olive oil and fry it up until the veg are soft.  Return the bacon to the pan, fish the couscous out of the mushroom water and mixd it all together - photo.

Ladle the mix into/on top of the mushrooms, top with cubes of blue cheese, and bake at gas 4 for 30 minutes.  I put a foil hat on for the first 10 minutes, but I don’t think it was needed.

We ate them with steamed new potatoes - they were gorgeous.
