pork chops in spiced honey orange sauce

This recipe came about after I wanted to do something a bit different with Pork Chops, and came across a recipe using Marmalade and Mustard powder.

Not having either ingredient to hand, I adapted in this way.
The recipe is not exact, I am sure that you will adjust it to your taste!

derves 3

3 pork chops

orangejJuice (any brand, long life will do fine!)

runny honey  (supermarket own value brand will do nicely)

1 onion

English mustard
garlic minced

chilli garlic sauce (I use Lee Kum Kee brand, and cannot say what flavor another brand will add!!)

light soy sauce

cornflour

Brown the pork chops in a large frying pan. Remove the chops from the pan and set aside. Finely chop the onion and caramelise in the pan. return the chops to the pan, and add the orange juice until the chops are almost covered. Add about 3 or 4 tablespoons honey and stir in to the orange juice.  Add ½ to 1 teaspoon and ½ to 1 teaspoon chilli garlic sauce to taste. Add 4 to 5 teaspoons mustard. The soy sauce is used to balance the sweetness of the honey, so add this to taste, it is important that you taste at this point so you can adjust the recipe if you feel that it needs it. Water can be added if you feel the flavor is too strong. Thicken with ornflour. Serve and let your taste buds thank you!!
