aubergine and feta rolls

Quantities were a bit fluid here.
6 long aubergines, sliced lengthways into 1cm thick slices
roughly 4 packs of feta cheese
3 tbs fresh mint very finely chopped
1 tsp dried mint

Brush each slice of aubergine well on both sides with olive oil.

Gently fry each slice until they are well browned and floppy enough to roll up.

Set aside to cool enough to handle.

Mix the cheese with the mints and add enough olive oil to moisten.

Take about a tablespoon of cheese, squeeze into a flattened ball, place at the broad end of the aubergine and roll up.

Place the rolls, join side down, in a tupperware until cold.
