ginger cake

175 g plain flour
¾ tsp ground ginger
1 tsp baking powder
¼ tsp bicarb. of soda
½ tsp ground mixed spice
75g light muscovado sugar
50g butter pieces
75g golden syrup
40g black treacle
105 ml milk
1 lightly beaten egg
40g bottled stem ginger, thinly sliced

Line a bread pan with grease-proof paper. Sift the flour, ginger, baking powder, bicarb. of soda & mixed spice together into a bowl. Melt the sugar, butter, syrup & treacle over low heat. Make a well in the centre of the dry ingredients and pour in the melted mixture. Add milk, egg, stem ginger and mix thoroughly. Pour the mixture into the bread pan. Cook for 40 minutes on gas mark 5. Leave to stand for 2-3 minutes, turn out onto a wire rack. Leave for 2 days to make the cake sticky & moist. Eat.
