cranberry and walnut cake.
rating:This is very quick and easy to make and always a big hit.
Ingredients
(Note - I have this originally from an american recipe so the volume measurements are original, the metrics are my conversion - it has worked so far! Don't ask me if "cups" of berries and nuts should be measured whole or chopped...)
290g (2 cup) plain flour
235g (1 cup) sugar
1+1/2tsp baking powder
1 tsp salt
1/2 tsp bicarb
175mm (3/4 cup) orange juice
zest of 1 orange
2 tbs sunflower oil
1 egg - beaten
250-300g (1 1/2 cup) cranberries
100g (1/2 cup) walnuts + a few more for the top
Method
Blitz the cranberries and walnuts - don't go too far! Chunky is good...
Mix flour, sugar, baking powder, baking soda and salt, stir in orange juice, zest, oil and egg - mix well. Stir in fruit and nuts.
Spread evenly in a loaf tim (about 22cm by 12cm) (9"x5"), and decorate top with half or larger nut chunks
Bake at 180 for about 55mins, until a skewer comes out clean. (I have known it take another ten minutes - it's very moist so as long as the top isn't burning, it'll be fine!) Allow to cool for about 15 mins before you try to turn it out, then turn out onto a wire rack and allow to cool completely.. Cool. Eat.
