chicken with grapes

Serves any number - looks impressive but very easy to make

Breasts of chicken (1 per person)

Double cream (low fat/long life cream is OK)

Mayonnaise (low fat is fine)

Garlic (4 - 6 pieces crushed.  Don't be shy with the garlic)

A bunch of Seedless green grapes

1. Place chicken on foil on a baking tray and cover with more foil - you do not want the chicken to go brown or crispy. Cook  in oven at 150 C for 1 and 1/4 hours. Cool and place in fridge until final preparations

2. Mix together equal quantities of double cream and mayo to make a thick 'sauce'.  Add the garlic and the chicken and make sure the chicken is librally coated. 

3. Place chicken mixture on a plate in a heap and cover with halved seedless grapes. Keep in the fridge (covered in clingwrap or all you food will reek of garlic) until ready to serve
