oaty soda breadrating:
30g butter or dripping
300g wholemeal or spelt flour
1.5 level tsp bicarb
.75 level tsp salt
1.5 level tbsp brown sugar
Bung oats/oatmeal in saucepan, add water and butter/dripping and bring to boil. Take off heat, put lid on saucepan, and leave until cool. (Heat oven to 200c or 180c fan assisted.
Grease 18-20cm square tin and line base with baking parchment.) Put oat mixture in bowl with remaining ingredients. Mix. (If you are using oats rather than oatmeal you may need to add more water. It needs to be dropping consistency.)
Spoon into tin, cover with foil and cook for 15 mins. Remove foil and bake for further 30 mins until golden brown.
Gorgeous as it is -even better toasted.
