• 20g-25g basil
  • 5g Coarse sea-salt
  • 2 cloves garlic, sliced
  • 10g Pine Nuts, lightly dry fried.
  • 20g fresh parmesan (or something similar- I used Desmond)
  • 2 fl oz Extra Virgin olive oil.

Take mortar and pestle and add the ingredients in the following order:

Salt, pine nuts, garlic and then basil and start grinding until you get a nice consistent pulp. Then start combining the cheese, about 5g at a time until it's all mixed in. Then add the olive oil a little at a time until it's all absorbed.
