chilled courgette souprating:
11/2 ozs butter or a tablespoonful of olive oil
1lb sliced courgettes
5 oz can consommé
salt and pepper
1/2 bunch watercress
5 oz carton natural yoghurt
heat butter in pan, add courgettes and cook slowly until soft.
add consommé and seasoning. Discard thick watercress stalks and add leaves to pan. Cover and simmer 20 minutes. Purée mixture in blender. Adjust seasoning, chill in fridge. Stir in yoghurt just before serving.
