6 wooden skewers
6 tablespoons smooth peanut butter
4 tablespoons groundnut oil
2 cloves garlic, crushed
2 teaspoons grated onion
1cm (1/2 inch) grated fresh ginger
2 green chillies, finely sliced
4 skinless and boneless chicken breasts, sliced into strips
soak 6 wooden skewers in water. Place peanut butter in bowl with oil, garlic, onion, ginger and chillies. Beat well together.
stir the chicken strips into peanut butter mixture, cover and leave to marinate in refrigerator in non-metallic bowl for at least 3 hours.
thread chicken strips onto skewers and cook under preheated moderate grill for 20 mins or until chicken is cooked through. Turn frequently and brush with remaining marinade.
serve with Thai fragrant rice and stir-fired veg. [I think she means fried - Ed]
