brussels sprouts with almondsrating:
675g brussels sprouts, trimmed
25g blanched almonds
1 garlic clove, cut into chunky slices
thinly pared rind of 1 lemon,chopped
1 1/2 tsp breadcrumbs
salt & pepper
Steam brussels sprouts until done to taste, then place on a serving dish in a barely-warm oven (about 50-75 degrees C).
Heat half the butter in a frying pan, add the almonds and the garlic and stir-fry for a few minutes. Add the lemon rind, season with salt and pepper and remove from the heat. Remove and discard the garlic.
Melt the remaining butter in a small saucepan and stir–fry the breadcrumbs until golden, then stir into the almond mixture, spoon over the brussels sprouts and serve.
