naan bread

Ingredients
9 fI oz semi-skimmed milk
3 tbsp natural yoghurt
1 tsp sugar
1½ tsp salt
2 tbsp melted unsalted butter or ghee
450 g strong white bread flour
1¼ tsp instant or fast acting dried yeast
¼ tsp Kalonji
Makes 4

Method
Pour the milk into the breadmaker bucket, followed by the yoghurt, sugar, salt and butter or ghee. Cover with the flour and finally sprinkle the yeast & kalonji over. Fit the bucket into the breadmaker and set to the dough programme. When the cycle is complete, turn the dough out on to a lightly floured surface and knead until smooth. Divide into four equal sized pieces. Roll out each piece to an oval about 5 mm 1/4 in thick. Preheat the grill to its highest setting and heat a baking sheet under it for a couple of minutes. Cook the naans two at a time under the grill far about 2-3 minutes on each side until puffy and golden. Once cooked, wrap the breads in a clean tea towel to prevent drying out and serve hot. If you want to make the naans ahead of time simply re-heat in the oven, or for a few seconds in the microwave.
