filetto di maiale agli agrumi - pork tenderloin with citruses

Ingredienti: filetto di maiale, un limone, un'arancia, mezzo pompelmo, un etto di speck ,sale e pepe q.b., olio extra vergine di oliva q.b., mezzo bicchiere di vino bianco.

Preparazione: avvolgere il filetto nello speck e legarlo con lo spago da cucina senza salare, metterlo in una casseruola con un po' di olio, pepe e farlo rosolare, aggiungere il vino e far evaporare. Grattugiare le bucce degli agrumi e spremere i succhi, quindi unire il tutto al filetto di maiale e portare a cottura per non più di 20 minuti coperto. Far freddare la carne e tagliarla a fette non troppo sottili, preparare il sughetto, aggiungendo un cucchiaino da caffè di maizena per addensarlo un pò. Servire preferibilmente con una purea di patate con un aggiunta di buccia grattugiata di un' arancia.... E' buonissimo.

Ingredients: pig tenderloin, one lemon, one orange, half grapefruit, 100 g. of speck (smoked ham), salt and pepper as much as you need, first rate olive oil  as much as you need, half white wine glass.

Preparation: wrap tenderloin with speck and tie it with a string for cooking, no salt it, put it into a saucepan with a little bit of oil and pepper, let it get brown, add wine and let it evaporate. Grate the the peel of the the citrus and sqeeze the juice, join the whole to the tenderloin. Cover the soucepan and let it bake for less than 20 minutes. Let the meat cool outside the refrigerator and  then cut it into no thin slices. In order to prepare the gravy, add a spoonish of maizena ( maize meal) in order to thicken it. Serve it possibly with a mashed potatoes added with the grated peel of an orange.
