raw courgette salad

I invented this little salad to help with a lovely glut of courgettes.

2 or 3 very fresh, small courgettes
1 teaspoon capers, finely chopped
half a shallot, finely chopped
small handful of mint, finely chopped
3 tablespoons extra virgin olive oil
2 teaspoons lemon juice
2 teaspoons cider vinegar
quarter teaspoon salt
lots of freshly-ground black pepper

Wash courgettes; top and tail them, then slice them very finely, preferably using the blade on the side of the grater.  Put into dish.  Sprinkle on quarter of a teaspoon of salt and stir to mix.  Add a dressing made of the ingredients above.  (Adjust quantities to suit your own taste). 

Refrigerate for half an hour before serving to allow the flavours to combine.
