reverse-engineered aloo chat

In a previous life, I used to eat regularly in Chesham Tandoori and one of my favourite starters was Aloo Chat. In those days there was no such thing as That Interweb, and I was unable to find a recipe, so two of us tried for ages to work out how to get to the finished product. This is what we came up with.

Serves 4

Knob of butter
2 tbsps vegetable oil
2 chopped onion
4 fresh tomatoes, quartered
4 medium sized potatoes, thinly sliced
4 dessertspoons flour
1/2 tsp ground ginger
4 cardamom pods
1/2 tsp ground cinnamon
2 heaped tsps ground coriander
1 tsp cround cumin
1 tsp chili powder
2 finely chopped cloves of garlic
1/4 tsp grated nutmeg
1/4 tsp ground fennel
1/2 pint strong chicken stock

Fry the spices in the butter and oil until they ebcome fragrant. Add the
onion and continue frying until it softens. Add the flour and stir well in.
Add the potato slices, tomatoes and stock and reduce to a sticky mass
containing softened potato slices.
